It is on virtually a daily basis that at least one of our customers declares their steak to be the best they have ever experienced. We are flattered and proud, but not surprised.
We have gone to extraordinary lengths to source the very finest herds in the most pristine environments, and then have them prepared to our exact requirements. They are, for example, all dry-aged for 14-28 days before delivery.

Seafood
Some of Tasmania’s favourite sea creatures enjoy world acclaimed status, such as the Lobster, Oyster and Salmon. We are not the first to acknowledge that most of their fellow occupants of the cleanest oceans in the world have the same incredible qualities. We firmly believe that the Scallops, Mussels, Abalone and other delicacies we so carefully source cannot be surpassed.
To visit Petuna Seafood’s Salmon and Ocean Trout pens in Macquarie Harbour, in the remote Southwest of Tasmania, is to fully appreciate the purity of their produce. In this extraordinary pocket of the wilderness the Southern Ocean rolls in from the Antarctic to meet the Gordon River’s pristine waters... that is Pure South.
The most vibrant and healthy scalefish enjoyed in Australia, for the most part, are taken in the waters in the south. Again we enjoy sourcing the best we can find amongst them, and personally believe that some of the finest eating fish are some of the lesser known varieties. We strongly recommend and promote the likes of the Tasmanian Stripey Trumpeter and the Harpuka.
Lamb
We are not alone in our belief that Flinders Island, at the eastern end of Bass Strait, produces the premium table lamb in Australia; it has several awards and accolades supporting that opinion.
Their Prime Lamb produces sublime cuts, as does their acclaimed Milk Lamb, which has a unique flavour not replicated anywhere else in the country.
Dairy
Tasmania is justifiably proud of its dairy industry as they lay claim to some of the most exceptional produce on the globe. We have sourced our cultured butter, our creams, our yogurts, and of course our ever changing selection of cheeses from an extraordinary array of gifted craftspeople;

The balance of our menu is ever changing with the availability of the produce. The constant that they share is that we always source the best quality we can find, like Groenewold Poultry at Latrobe or the hand-fed Pork from Bluff Point. We are yet to find better Quail and Pheasant than that which we get at Scottsdale, or the eel farmed at Deloraine... but we are happy to keep searching.
